Best winter's afternoon tea

A few years ago I found a recipe for rice pudding in the slow cooker and boy, it was sooooo good. I completely forgot about it until the other day! It was perfect weather for having something hearty and warm for afternoon tea and this dish said "remember me?". It's such an easy recipe - no stirring required, just set and forget. The only problem is, it's hard to forget when it smells so good while it's cooking...



OK so here's the recipe for the BEST rice pudding ever. Trust me, even if you don't like rice pudding you'll love this! The butter makes the top all caramelised and scrumptious. Although we were too hungry to wait for much caramelisation this time...

3/4 cup long grain white rice
3 cups milk
½ cup sugar
1 teaspoon vanilla essence
½ teaspoon cinnamon
pinch salt
2 tablespoon butter, cubed

Lightly grease the slowcooker bowl. Rince rice under cold water. Put everything except for the butter into a slowcooker. Sprinkle cubes of butter over the top and cook on high for 2½-3 hours, until the rice has absorbed all the liquid.

Ok i made this this arv. Boo and i were the only ones to try it. She didnt like it. I LOVED it. So now i have a whole pot to eat on my own...Rice is healthy right? I did enjoy mine witj a scoop of vanilla icecream.

Rice Pudding is my fave dessert. I can't tell you how many times Mum has made it for Felicity thinking it was HER fave, and she HATES it! It's MY fave!! I wouldn't mind getting Fliss's fave though (caramel tart!)
I will have to try your recipe some time! I should pin it!

oh yum! Totally trying this... but will have to make it dairy free for me so will see how it goes with coconut milk ;)
